No Bake Energy Bites

A few years ago, we created a private FitRev Facebook group for all of our incredible fr-embers (aka friends/members) to share recipes, feedback and support each other through our health and fitness journey. But, have you guys ever scrolled the group feed searching for a recipe that caught your eye once, but it was lost in all the posts? Well, instead of scrolling through the FitRev feed, we will start collecting all of your “from the kitchen” ideas to post here! Lucky for us, Linsey is up first to share these delicious snacks to keep you going throughout the day. Thanks, Linsey! xo

No Bake Energy Bites

When you finish up a workout, what do you do first? Do you refuel the body that just pushed so hard through the cardio or strength training you put it through? We all should, but we are often strapped for time and dash off to the next task of the day before giving our bodies the nourishment it so deserves. Thank your body for it’s hard work by grabbing a quick snack that provides you with a boost to continue on with your day. Enter, no bake energy bites. These quick little treats can be removed from your freezer while you shower and get ready for wherever your day takes you next, while providing you some quick nourishment which will help you bounce back from your latest workout.

As a Mom of a busy 3 year old, I have little time to think about nutrition replacement after a workout. I need something satisfying that will leave me full until I can sit down to enjoy a quality meal. With the help of my daughter Avery, I whip up these energy bites once per week to add that pep back in my step. The great thing about them? They are quick and easy to make, require no baking time, and are an easy recipe to whip up with your kids. The ingredients are also interchangeable, pending your personal taste!

Servings

Makes about 8-10 energy bites pending the ingredients you use and the size of the bites.

Prep Time

15 minutes to prepare ingredients/1 hour to freeze or harden in fridge

Ingredients

1 cup rolled oats

½ cup mini semi-sweet chocolate chips (dark chocolate is also delicious)

½ cup coarsely or finely ground flax seed (either works well)

½ cup crunchy peanut butter (smooth works just fine if you prefer, Peanut Butter & Co’s Crunch Time is our favorite)

1/3 cup of honey

1 tsp of vanilla extract

¼ cup of slivered almonds

Directions

  1. In a large bowl combine oats, chocolate, flax seed, peanut butter, honey, vanilla, and almonds. Form bites in balls of approximately 1 inch, making 8-10.
  2. To freeze: place each bite in Tupperware or other container, separating layers with parchment or wax paper. Place in freezer until ready to enjoy. Prior to eating, take bite out of freezer and let sit for 3-5 minutes to soften. To refrigerate only: place each bite on parchment or wax paper on baking sheet and place in fridge for one hour – then, enjoy!

Substitutions or Add-Ins

Dried cranberries, raisins, chopped walnuts, maple syrup, dark chocolate chips, chopped dates, coconut shavings

Enjoy!
